Lemongrass (Cymbopogon citratus), commonly called lemon grass or fever grass, is a tall, perennial tropical grass in the Poaceae family, native to southern India and Southeast Asia. This clump-forming herb grows 3–6 feet tall with long, slender, blue-green to gray-green blade-like leaves that droop at the tips and emit a strong, fresh lemon-citrus aroma when crushed. The flavorful part is the pale, bulbous base of the stalk, which is fibrous yet tender inside. It thrives in full sun, moist, well-drained soil, and warm, humid conditions—often grown as an annual in cooler climates or in containers. Heat-loving and easy to propagate from stalks, it's highly aromatic and productive.

Lemongrass is a staple in Southeast Asian cuisines, especially Thai, Vietnamese, and Indonesian, infusing soups (like tom yum), curries, stir-fries, marinades, rice dishes, and seafood with its bright, lemony, slightly gingery flavor without acidity. The stalks are smashed, sliced, or bruised for use, then removed before serving. It brews refreshing herbal tea for digestion or relaxation, and its essential oil scents soaps, candles, and repellents. Traditionally used medicinally for stomach issues, fevers, colds, inflammation, and anxiety, fresh or dried forms maximize its zesty essence.
